My husband’s mom made lots of pies and desserts while he was growing up. I don’t make those types of desserts often (even though he would like me too) but I do like to make him a special treat for dessert once in a while. My family loves fruit crisp desserts like apple crisp or peach crisp.
I recently had some blueberries in my fridge that needed to be used up so I decided to add them to my peach crisp recipe. This recipe is so easy to make (much easier than a pie) and I love the crispy oatmeal topping. It smells delicious too!
Peach Blueberry Crisp Recipe
- 8 fresh peaches
- 2 cups blueberries
- 3 T. sugar or other sweetener (raw honey, coconut sugar, or stevia)
- 3 T. brown sugar
- 2 T. flour
- 1/2 cup oatmeal
- 1/2 t. cinnamon
- 2T. cold butter or coconut oil
Preheat oven to 350 degrees.
Slice the peaches and mix with the blueberries. Sprinkle with sugar or sweetener of your choice. You can also add a tablespoon of cornstarch if you want the filling to be thicker. Pour into an 8 x 8 baking dish.
Mix the brown sugar, flour, oatmeal, and cinnamon. Cut the cold butter or coconut oil with a fork and to mix until crumbly. Sprinkle over the fruit.
Bake for 40 – 45 minutes.
Best served warm. It is also very good with a small scoop of frozen yogurt or ice cream.
